I have separated my 2 Hermanns, temporarily perhaps. Any idea why the largest bites? If reunited, will he bite again?

Whatever the reason, this can't be much fun for the younger tortoise. Depending on how bad the situation is, you will want to provide either more space in the same enclosure so the younger one can get away -- even providing a spot he can get to where the older one can't follow, like up onto a rock or into a smaller space -- or a completely different enclosure.
